Roasted Peppers With Sausage Omelet Recipe


Roasted Peppers with Sausage Omelet

Ingredients Needed:

  • Bell peppers, roasted red peppers, or green chili
  • 3- 4 eggs
  • 1 tsp fresh ground black pepper
  • 2 tsp coconut oil or equivalent
  • 1/2 lb of cooked and sliced of beef or pork sausage links, nitrate/nitrite free
  • 2 Tbs freshly chopped parsley
  • Creates two omelets.

Cooking Directions: 

1. Cook your peppers in high heat on a heavy bottom frying pan.  As your peppers begin to blacken and blister, turn them over. Once both sides are cooked, seal them in a plastic bag with a few drops of water and some air.  After 5-10 minutes, remove them from the bag and peel off the skin and then dice.

2. Prepare your eggs by beating them in a small bowl with your black pepper.

3. Heat up a non-stick medium frying pan over medium heat. Once it is hot enough, add your tsp of coconut oil to the surface of the pan.

4. Pour half of your beat eggs into the hot pan. Once your egg begins to set, add half of the remaining prepared ingredients to one half of the frying pan.

5. Once the egg is fully cooked, fold the egg over the fillings and let it cook 1 to 2 minutes more.

6. Rinse and repeat to create your second omelet.
