Coconut Shrimp Recipe

Coconut Shrimp

Ingredients Needed:

  • 1 lb of shrimp or raw prawns in shell
  • 1-2 cloves of minced garlic
  • 1 tsp of peeled and minced ginger root
  • 1 403 mL can of fresh coconut milk
  • 1/4 tsp of fresh ground black pepper
  • 1/4 tsp of sea salt
  • Creates two servings.

Cooking Directions: 

1. Carefully wash your shrimp or prawns. Do not shell them yet.

2. Grab a medium size saucepan and place your shrimp or prawns inside. Add the ginger, sea salt, coconut milk, fresh ground pepper, and garlic.

3. Next, bring the saucepan to a boil and stir frequently.

4. After a few minutes, reduce the heat and let it simmer for about 15 minutes uncovered. Make sure to keep stirring frequently.

5. Finally, remove the shrimps or prawns from their shells and serve them warm.

Pork Tenderloin with Blueberry Sauce Recipe

Pork Tenderloin with Blueberry Sauce

Ingredients Needed:

  • 1-1/4 lb of fresh pork tenderloin
  • 3/4 lb of trimmed green beans
  • 1 Tbs of divided olive oil
  • 1 tsp of fresh raw honey
  • 1 of diced small onion
  • 1/4 cup of apple cider vinegar
  • 1-1/2 cups of thawed frozen blueberries
  • 1/2 tsp of dried thyme
  • 2 tsp of Chicken Grilling Blend seasoning
  • 1/2 tsp of fresh ground black pepper 
  • 1/2 tsp of sea salt, if desired
  • Creates four servings

Cooking Directions:

1. Set oven to a preheat of 400° F.

2. Season the pork with chicken grilling blend seasoning, 1/4 tsp of black pepper, and optional 1/4 tsp of sea salt. Set the pork in a roasting pan and allow it to roast for about 25 minutes. The internal temperature should reach 155° F.

3. 10 minutes before the pork is finished cooking, take out the roasting pan and spread green beans evenly around the pork. Coat the green beans with a 1/2 Tbs of olive oil before stirring them and returning the pan back into the oven.

4. Use a small saucepan to heat up the remaining 1/2 Tbs of olive oil on medium-high heat.

5. Now, place your diced onion into the pan and cook for about 5 minutes. Then mix in your honey, vinegar, blueberries, 1/4 tsp of sea salt, 1/4 tsp of black pepper, and thyme.

6. Cook until the sauce thickens, which should take about 5 minutes.

7. Once the sauce is completed, serve the pork with green beans on the side and sauce poured on the top.
