Ingredients Needed:
- 1 1/2 cups fine ground blanched almond flour
- 1/2 tsp baking soda.
- 1/4-1/2 tsp sea salt
- 1/2 tsp cinnamon (completely optional)
- 2-3 large regular eggs or pastured eggs
- 4-5 Tbls full fat coconut milk or coconut oil
- 2 Tbls of fresh honey
- 1 tsp vanilla extract or juice of half a lemon
- 1/4 cup fruit (completely optional)
- Creates two servings.
Cooking Directions:
1. Combine find ground blanched almond flour, baking soda, coconut milk or oil, eggs, fresh honey, vanilla extract or lemon juice, and mix it together thoroughly. The batter should get nice and thick.
2. Heat your non-stick pan with 1 tbsp of coconut oil or equivalent.
3. Once the pan is fully heated, add your batter to the pan. I highly recommend using silver dollar size for easier flipping.
4. Once the top begins to boil and the edges begins to dry, flip them over. If they cook too fast or too slow, adjust the heat as each stove behaves differently.
5. Repeat the above steps until you have finished up the batter. It should make about 25-30 silver dollar sized pancakes.
6. You can top it off with optional fruit.
