Chicken Fajita Salad Recipe

Chicken Fajita Salad

Ingredients Needed:

  • 1/2 of a diced yellow onion
  • 1 fresh avocado
  • 1 Tbs of coconut oil
  • 1/2-3/4 lb of skinless and boneless chicken breasts
  • 2 diced medium potatoes
  • 1 large head of romaine or red leaf lettuce
  • 1 large bell pepper, chopped
  • 1/2 tsp of freshly ground cumin
  • 2 tsp of dried oregano
  • 1/4 tsp of sea salt, if desired
  • Creates two servings.

 

Cooking Directions:

1. Gather your tomatoes, onion, and bell pepper to wash and then chop them.

2. Next, Cut your chicken into slices of 1/2".

3. Prepare your skillet by heating it on medium-high heat. After it gets hot, coat it with coconut oil and add onions. Let the onions saute until they are slightly translucent and softened.

4. After the onions saute, add your cumin, sea salt, oregano, and chicken while stirring frequently as it continues to cook.

5. Once the chicken has reached the perfect brown color, add your peppers and continue to cook until it is tender.

6. While the chicken cooks, prepare your lettuce by washing and shredding them. Afterwards, divide the lettuce between two plates.

7.  Place your chicken fajita mix, sliced avocado, and tomatoes on top of the lettuce and serve.
