Bison Chili Recipe

Bison Chili

Ingredients Needed: 

  • 3 stalks of diced celery
  • 1/2 medium yellow onion, diced
  • 2 tsp of thyme
  • 2 cloves garlic, sliced
  • 1-3/4 lb ground bison (elk, venison, or beef may be substituted)
  • 1 8oz can of freshly diced tomatoes
  • 1 7oz can of mild green chiles
  • 2 tsp of chili powder
  • 1 Tbs of coconut oil, bacon grease, lard, or tallow
  • 1 12oz jar of salsa
  • 2 tsp of fresh ground cumin
  • 1 7oz can of mild green chiles
  • 2 tsp of optional sea salt 
  • Creates two servings

Cooking Directions:

1. Prepare a soup pot with a heavy bottom by putting it over a stove at medium-high heat. Coat it with coconut oil once the pan is hot.

2. Mix in your garlic, celery, onions, and saute for about 3-4 minutes, until the onions are translucent in color.

3. Now, mix in your thyme, chili powder, ground bison, and cumin.

4. Stir frequently while it cooks, it should take about 5-6 minutes.

5. Finally, pour in your green chiles, salsa, tomatoes, and sea salt.

6. Let the chili simmer for at least 1 hour and then serve.
