Ham Stir-Fry Breakfast Recipe

Ingredients Needed:

  • 1 Tbs of pure coconut oil
  • 1 diced avocado
  • 1 diced small sweet potato, dice into 1/4" cubes
  • 1/4 of a diced yellow onion
  • 1/2 lb ham, diced
  • 1/8 tsp of thyme
  • 4 sliced mushrooms
  • A pinch of freshly grounded black pepper
  • Creates two servings.

Cooking Directions:

1. Take a large saute pan and heat it over medium heat. Add coconut oil to the surface once the pan is hot.

2. Now you can mix in your sweet potatoes, thyme, onions, and mushroom.

3. Consistently stir the mixture as it cooks, it will take about 12-15 minutes for the sweet potatoes to become tender and firm.

4. You may add small small drops of water and cover the pan for a few minutes at a time. This will help quicken the cooking time of the sweet potatoes.

5. Next, you will add your Ham and cook it thoroughly.

6. Lastly, if you desire, you can add your fresh ground black pepper to spice it up a little. You can then top it off with avocado and serve it hot or warm.
